The wine
Halfway between Vosne-Romanée and the Côte de Beaune, Nuits-Saint-Georges lends its name to the entire Côte de Nuits — a flagship appellation that spans the villages of Nuits-Saint-Georges and Premeaux-Prissey, across three hundred and twenty-five hectares of which one hundred and forty-seven are Premiers Crus. AOC since the decree of September 11, 1936, it is devoted to Pinot Noir, which accounts for more than ninety-five percent of production. Forty-one Premiers Crus shape the terroir, among which Les Saint-Georges, Vaucrains, Cailles, and Boudots have held aristocratic rank since the nineteenth century. The wines, of deep purple colour, open with aromas of cherry, strawberry, and blackcurrant that evolve towards leather, truffle, and game after a decade in the cellar. Full-bodied, robust, and long on the palate, they ask for five to ten years to fully express themselves, and up to fifteen for great vintages. Served at sixteen degrees, a Nuits-Saint-Georges pairs beautifully with roast lamb, duck breast, or an aged Époisses.
